You will need:
- 3 Tbsp Coconut Flour
- 1 Tbsp Psyllium Husk
- 4 Tbsp Softened Cream Cheese
- 4 Eggs
- 2 Tsp Baking Powder
- Almond Milk
- 2 Tsp Vanilla Extract
- 1 or 2 Tsp Stevia (Sugar substitute)
- 1 Tsp Maple Extract* (Optional)
- 1/2 Tsp Cinnamon* (Optional)
Preparation is just like the recipe that you are used to, the regular one. Simply add all ingredients in a blender, blend them well and for few minutes your batter is ready to go.
This is a flexible recipe. You can add a melted butter to the batter (1 Tbsp) and to use this batter for keto waffles.
First soften cream cheese, just scoop the cream cheese into a bowl or dish and put in microwave, setting the microwave to ‘High Temp.’ and heat briefly and then, together with eggs, vanilla, stevia, almond milk and with maple extract* or cinnamon* (or both) put all in a blender and blend them for 2 minutes. After add the coconut flour and baking powder and bit more milk if needed and blend again for 4-5 minutes till everything is blended well.
When your batter is ready, fry your pancakes like always. Pour batter into greased pan and form circles, approximately 5 inches in diameter and fry them over medium heat. First flip when surface begins to bubble and when edges begin to harden and then cook until golden brown and that is for approximately 3 minutes.
