Well-planned, meaningful diet based on plant-based food reduces the risk of obesity, heart disease, diabetes and stroke and significantly prolong life expectancy. Here are few vegetarian recipes as suggestion for your next meal.
Cooked celery in tomato sauce
For 3 portions, you will need: 1 large celery root, 1 finely chopped onion, 3 tablespoons minced tomatoes (or thick tomato juice), 150 g black olives, 1 tablespoon oil, salt and pepper. First, peel the celery root and onion and cut it into medium size pieces. First fry the onions in a pan with oil for two minutes and then add the celery and fry for additional 2 minutes. Then add water, just enough to cover them and let it cook. While it’s cooked, add the olives, minced tomatoes (or tomato juice), salt and pepper to taste and stir occasionally. Continue to cook until you see the celery is completely cooked.
Potatoes with sauerkraut
This is a vegetarian version of traditional German dishes. You will need 1 kg of potatoes, 2-3 onions, sliced into thin rings, 100g smoked tofu, cut into thin slices, 3 tablespoons olive oil, salt and pepper. First, peel and cook the potatoes and then pour off the water, let them cool a bit and cut them into slices. Heat the oil in a pan and add chopped onion. Fry over medium heat, stirring occasionally, until onions are fried. When is done, add the smoked tofu, potatoes, salt and pepper. Occasionally mix them. When the potatoes get goods brownish color, the meal is finished. Serve with stewed sauerkraut.
You will need: 1 kg of pickled cabbage, finely chopped, 100 g smoked tofu, 2 bay leaves, peppercorns 10-15 large, 5 juniper berries, 2-3 tablespoons olive oil. Rinse sauerkraut in cold water to remove excess salt. Pour the cabbage in a pan, add pepper, juniper and smoked tofu. Pour as much water to cover everything. Cover and simmer until cabbage is braised and not all the water evaporates. Finally, add the oil and mix well.
For 3-4 servings you will need: 3 eggplants, cut into slices 1 cm thick, ½ cup flour, ½ cup milk (or soy milk), a cup of crumbs of toasted bread, cooking oil, salt and pepper.
Mix the flour with salt and pepper. Coat the rolls of eggplant in flour, shake off excess, dip in milk and sprinkle evenly with crumbs. Fry in oil until golden brown. Serve warm with a salad of your choice.
